This August, indulge in the season’s most awaited flavours at Ilish Haat — an a la carte festival that celebrates Bengal’s eternal love for Hilsa. On the menu are iconic preparations like Shorshe Ilish (hilsa in traditional mustard gravy), Ilish Bhapa (dum-cooked in mustard and coconut), Borishali Begun Kalo Jeera Ilish (East Bengal-style hilsa with brinjal and black cumin), Ilish Bhaja (classic fried hilsa), Posto Ilish (hilsa in poppy seed and green chilli gravy), and Ilisher Tok (Midnapore-style tamarind hilsa).
